Upcoming Classes

We’ve missed you all so much at the DLM Culinary Center! That’s why we’re excited to get back in the kitchen, with some smart modifications, starting with a limited number of classes. Please note that all classes will have a max of 16 attendees and guests who arrive together will be seated six feet away from other guests. We also kindly ask that guests wear a face covering when not at their seat. We’re also focusing classes on instructor demonstrations with a resulting menu for guests to enjoy, learn from, and be entertained.

Decorating a gingerbread house during the holiday season is a traditional family pastime. Join Culinary Instructor Zebbie Borland for this hands-on class and learn the step-by-step process for decorating your very own gingerbread house. All icings and candies for decoration will be provided, but feel free to bring some of your own to personalize your house. This is a great activity for parents and children to do together. With recipes that are always approachable and doable in your kitchen, Chef Carrie will share some short cuts to make the holidays a little more delicious. Teresa will pair wines with four tasting plates. Cranberry Crostini; Apple, Shallot, and Blue Cheese Tart; Robiola Figs; Stuffed Fried Olives; Fried Chicken and Biscuit Sliders; Sichuan Riblets; Corozo Dates, and Thai Curry Meatballs. And we can't end the evening without a Chocolate Tasting plate!

Over the Top: A Food and Champagne Celebration!

Holiday Pastries

Join us in welcoming Jeannette Werle, an accomplished pastry chef, former bakery owner, and author of her first book, Why Not Desserts? Artisan Baking. Learn how to make a delightful assortment of pastries just in time for the holidays. Jeannette will demonstrate the technique for making Russian Tea Biscuits - flaky little biscuits with a sweet Poppy Seed Filling. For one of her bakery's best-sellers, Ambrosia Croissants, she'll use DLM's buttery croissants as vessels to fill with a Belgian Chocolate, Coconut, Fresh Bananas, and Jamaican Rum Filling. And for a perfect addition to Christmas morning breakfast; a delicious Raspberry Bakewell Coffee Cake, which just happens to be gluten free. Sparkling wine and a savory appetizer plate will be served in this class.

Feast of the Seven Fishes

Couples' Class
Christmas Eve in Italy is celebrated with lighter fare. Simple pastas, seafood, and antipasto-style plates are served in courses. From the Italian tradition of a meatless meal, the Feast of Seven Fishes is born. The Italian-American Christmas Eve dinner is a family-style meal featuring seven or more seafood preparations. Every family has its own set of food traditions when it comes to The Feast, but above all, it is a celebration shared with friends and loved ones. Frank and Mary would love to share this celebration with you!
i) Tartara di Tonna: A fresh appetizer start to the meal, it features high-quality tuna with plenty of lime, avocado, and just the right amount of heat to keep you coming back for more.
ii) Ostriche all’Italiana: Be ready for the rush from guests when the oysters come out of the oven during cocktail hour. Ostriche all’Italiana are breaded oysters on the half-shell baked with a blend of Italian spices. They're a perfect to pair with your drink of choice.
iii) Baccala Soup: Cooked on the stove in the days leading up to the meal, no two baccala soups turn out the same. In each Italian family, everyone thinks they know best to add a little bit more wine or cheese!
iv) Gamberetto Diablo: A guest favorite that is quick and easy. Baking sheets of gamberetto are covered in generous amounts of pepper and butter, then broiled fast and served hot. This also serves as a fill up course for less adventurous eaters at the meal.
v) Langostino Limoncello Farfelle: With a light sauce that keeps you wanting seconds, Langostino Limoncello is a perfect combination without being too heavy for a pasta dish late in the meal.
vi) Calamari Steak: Make sure to save room. Following the hot and fast broiling process, prepped sheets of breaded calamari are in and out of the oven quickly, as they are best served hot and fresh.
vii) Panzanella & Bianca Acciughe: The final round finishes the meal the Italian way with a delicious light salad.
We won't let you leave without a cannoli! This menu will be paired with Italian wines.

Taste + Table We're excited to begin the fall term with a new concept for sharing wonderful food and wine. You'll find no formal class or instruction, just fabulous four-course menus with expertly paired wines. For these dining events, we've chosen six of the top wine growing areas from all over the globe.
No country is more renowned for its food and wine than France. It's certainly one of the most celebrated at the Culinary Center! Join us for this delicious four-course menu with affordable wine pairings. Sharp, and tangy Roquefort Cheese Tart with Caramelized Onions and Frisée, Fresh Grilled Salmon with creamy Béarnaise, deeply flavored Coq au Vin, and decadent Chocolate Mousse. Wine is paired with each course.
