About Katherine Ballein

Katherine, a native of Helena, Montana, attended culinary school in Scottsdale, Arizona. She has extensive culinary experience as chef and pastry chef in catering, pastry, and bread. Katherine's most recent culinary experience was developing menus for Wright-Patterson AFB. She enjoys sharing her love of food with others and is excited to join the culinary team at the Dorothy Lane Culinary Center. Katherine lives in Oakwood with her her husband, Colin, and her cat, Bean.

Introduction to Custards

Join chef instructor Katherine Ballein for an enlightening education of the science behind making custards. Custards are the star component of many of our favorite desserts from Crème Brûlée and cheesecakes to lemon curd and pastry creams. Katherine will talk about the elements of custards and demonstrate making these confections: Pâte à Choux, Pastry Cream, Fresh Fruit Tart, Chocolate Pudding, and Lemon Curd, and provide recipes and information for each. You’ll enjoy these delightful desserts with sparkling wine.
