Cassoulet Beans in Savory Tomato Sauce

INGREDIENTS

  • 2 Tbsp DLM Extra-Virgin Olive Oil
  • ½ yellow onion, chopped
  • 2 cloves garlic
  • 4 tomatoes from a can of whole tomatoes, roughly chopped
  • ½ cup tomato juice reserved from can
  • 1 tsp cinnamon
  • 1 tsp oregano
  • 2 Tbsp capers
  • Salt to taste
  • 2 cups cooked cassoulet beans (or substitute with Marcella or lima beans)
  • Flat-leaf parsley, chopped
  • 1 lemon for juice

INSTRUCTIONS

In a sauce pan, heat the olive oil over medium heat. Add the onions and garlic and cook until soft.

Add the tomatoes, juice, cinnamon , and oregano and let simmer for 15 minutes.

Add the capers and season to taste with some salt and pepper. Add the cooked beans and simmer until heated through.
