Alongside it sits a block of Urbanstead 'Nati Gouda, an aged, natural-rind gouda crafted in Cincinnati — "the Nati" — and a two-time 2026 award winner, having placed 3rd Overall Best in Show at the American Cheese Society competition and taken Best in Show overall at the Los Angeles International Cheese & Dairy Competition. We round it out with a package of DLM Applewood Smoked Uncured Bacon (raw, ready for the pan), because the best grilled cheese always has bacon in it.

Finally, build the sandwich: Place one slice of bread, buttered side down, onto the grill pan. Top with the shredded cheese and cooked bacon, then close with the second slice of bread, buttered side up. Grill to golden brown, then flip and grill the other side until the cheese is melty and gooey.
