Yukon Potato Salad With Bacon

INGREDIENTS

  • 3 lbs Yukon Gold potatoes, cut into 3/4-inch cubes
  • 4 Tbsp Vera Jane's Extra-Virgin Olive Oil
  • 2 Tbsp Aunt Mary's Italian White Wine Vinegar
  • 2 Tbsp Dijon mustard
  • 4 green onions, thinly sliced
  • 6 large stalks celery, halved lengthwise and thinly sliced
  • ½ cup cooked DLM Uncured Bacon bits
  • ¼ tsp salt and pepper, to taste

INSTRUCTIONS

Steam potatoes for about 15 minutes or until fork tender.

In a large bowl, combine olive oil, vinegar, mustard, green onions, celery, and bacon bits.

Combine mixture with hot cooked potatoes and add salt and pepper to taste. This salad may be served hot or cold.
