Spanish-Style Garlic Shrimp

INGREDIENTS

  • ¼ cup Vera Jane's Extra-Virgin Olive Oil
  • 4 garlic cloves, minced
  • 1 tsp red pepper flakes
  • 1 lb shrimp, medium sized , peeled & deveined
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp dry Sherry
  • 1 tsp paprika
  • 2 Tbsp parsley, chopped for garnish

INSTRUCTIONS

In a sauté pan, heat the olive oil over medium heat and sauté the garlic and red pepper flakes briefly until soft, but not brown.

Add the shrimp and sauté for 1-2 minutes or until shrimp is almost cooked.

Add the lemon juice and sherry and paprika and sauté for 1 more minute.

Season to taste with the salt and pepper and garnish with fresh chopped parsley. Serve with a sliced DLM baguette!
