Shaved Asparagus Salad

INGREDIENTS

  • 1 bunch asparagus
  • 1 handful pistachios, roasted, shelled, and chopped
  • 1 Tbsp mint, chopped
  • 3 Tbsp lemon juice, freshly squeezed
  • 2 Tbsp Sherry vinegar
  • 1 tsp DLM 100% Pure Honey
  • 4 Tbsp DLM Extra-Virgin Olive Oil
  • Salt and pepper to taste
  • 1 cup Parmigiano-Reggiano or Pecorino shavings

INSTRUCTIONS

Using a vegetable peeler, shave the asparagus lengthwise to create strips. Toss with the pistachios and mint.

Whisk together lemon juice, Sherry vinegar, honey, and olive oil. Pour over asparagus and mix with salt and pepper to taste.

Top with shaved Parmigiano-Reggiano or Pecorino and serve.
