Herby Cucumber and Radish Salad

INGREDIENTS

  • 4 small Persian cucumbers
  • 2 bunches radishes, trimmed
  • 3 oz feta cheese, crumbled
  • ½ cup walnuts, toasted, if desired
  • 2 Tbsp fresh lemon juice
  • ¼ cup DLM Extra-Virgin Olive Oil
  • Salt and pepper to taste
  • 2 cups mixed fresh herbs like mint, dill, chives, cilantro

INSTRUCTIONS

Using a mandoline or sharp knife, cut both the cucumbers and radishes into thin slices. Place in a bowl and lightly toss in the crumbled feta and walnuts, if desired.

In a small bowl, mix the lemon juice and olive oil together and season with the salt and pepper. Dress the cucumber, radish, feta, and walnut salad with a tablespoon or two of the dressing. Pile onto a large serving bowl or platter.

Top with the mixed herbs lightly dressed with tablespoon of the dressing and some salt to taste.
