Heirloom Tomato & Peach Salad

INGREDIENTS

  • 1 lb peaches, cut into wedges
  • 1 lb local heirloom tomatoes, cut into wedges
  • 1 sweet onion, cut into thin slivers
  • 1 Tbsp Vera Jane's Extra-Virgin Olive Oil, for drizzling
  • 1 Tbsp DLM Pure Apple Cider Vinegar, for drizzling
  • ¼ tsp sugar, salt, & pepper, or more to taste
  • 1 container Old Souls Arugula
  • 1 container 80 Acres Farms Microgreens

INSTRUCTIONS

Toss tomato and peach wedges with sweet onion slices.

Drizzle with olive oil and apple cider vinegar; season with sugar, salt, and pepper.

To serve, place peaches/tomatoes on a bed of arugula tossed with a handful of microgreens.
