Add a little more DLM Extra-Virgin Olive Oil and make a salad dressing for seasonal veggies, like radishes and lettuce, layer with DLM Handmade Fresh Mozzarella and sliced tomatoes, or toss with pasta!

INGREDIENTS

  • 10 large garlic scapes
  • cup unsalted pistachios
  • cup Parmigiano-Reggiano, finely-grated
  • cup Vera Jane's Extra-Virgin Olive Oil
  • Sea salt and black pepper to taste

INSTRUCTIONS

Purée the garlic scapes, pistachios, and Parmesan in a food processor until very finely chopped. With the motor running, slowly pour the oil through the opening. Season the pesto with salt and pepper to taste.
