Curry Crab Dip

INGREDIENTS

  • 2 Tbsp butter
  • 1 cup onion, minced
  • 2 Tbsp ginger, minced
  • 2 tsp mild curry powder
  • 3 Tbsp mango chutney
  • 8 oz cream cheese softened
  • 1 cup mayo
  • 2 Tbsp lime juice
  • 2 green onions, sliced
  • ¼ cup cilantro, chopped
  • 1 lb crab meat
  • Salt and pepper to taste

INSTRUCTIONS

In a large sauté pan, melt the butter and cook the onion and ginger over medium heat until soft, about 5 minutes.

Add the curry powder and stir. Then, add the chutney, cream cheese, mayo, and lime juice, and cook stirring until smooth, about 1-2 minutes.

Stir in the green onions, cilantro and crab meat. Season to taste with salt and pepper. Cook until dip is warm and heated through. Serve with sweet potato chips or raw veggies.
