Caviar Deviled Eggs

INGREDIENTS

  • 12 hard-boiled eggs, shelled
  • 4 Tbsp mayonnaise
  • 2 tsp rice vinegar
  • 1 Tbsp Dijon mustard
  • Salt and white pepper to taste
  • 1 (30g) tin of favorite caviar
  • Minced fresh chives, for garnish if desired

INSTRUCTIONS

Slice eggs in half lengthwise. Remove yolks and finely mash in a small bowl. Using a fork, stir in mayonnaise, vinegar, and Dijon mustard until smooth. Lightly season with salt and the white pepper. Dollop the filling into the egg halves. Garnish each with a small dollop of caviar and chives.
