A harmonious blend of native Istrian and regional olive varieties, all grown organically in one 3,000-tree grove on Croatia's southern coast. PDO Certified Organic.
Each small-batch bottle is hand-signed and numbered by the producer, then tinted with the very red soil its trees grow in.
The olives are hand-picked while still mostly green and hurried to the mill, giving you a lively oil naturally rich in polyphenols.

Some olive oils are simply good. Istriana is the kind you'll want to talk about at the table. Grown along the Adriatic near the seaside village of Valtura, it carries the bright green character of an early harvest. Pour it where it can shine: over fresh mozzarella and ripe tomatoes, a bowl of white beans, grilled fish, or warm crusty bread with a pinch of flaky salt. With its sculpted, earth-colored bottle, it also makes a memorable gift for anyone who loves to cook.

Taste It Like a Pro
To enjoy Istriana on its own, pour a little into a small glass. Warm it in your hand, breathe in the aroma, then take a small sip. A gentle peppery tickle at the back of your throat is a good sign. It comes from the natural polyphenols in early-harvest olives and is a hallmark of fresh, high-quality extra virgin olive oil.
Keeping It Fresh
Store Istriana tightly capped in a cool, dark cupboard, away from the stove and sunny windows. The opaque clay-colored bottle helps protect the oil from light. For the brightest flavor, enjoy it within two to three months of opening. If it turns cloudy in a cold pantry, that's natural, and it will clear at room temperature.
A Gift With a Story
Pair a bottle with a loaf of artisan bread, a wedge of aged cheese and a jar of olives for a Mediterranean-inspired gift. Or tuck it into a basket for the home cook who has everything. The earth-tinted bottle and the story behind it make it a gift worth unwrapping.
Store in a cool, dry place away from sunlight.
Istriana began with a simple goal: to bring Istrian olive oil back to the prominence it enjoyed in Roman times. Rather than buying olives or an established grove, the founders started from the ground up, planting their own trees and overseeing every step from soil to bottle. The result is a small-production, estate-grown oil that has quickly earned a place among the world's best.
