This salami is best enjoyed at room temperature. For longer shelf life, it can be refrigerated, but is okay to leave out under 72 degrees. It is considered shelf stable upon USDA inspection standards.
No 1 Salami is the richest and creamiest salami of the North Country collection. It is boldly flavored with cheese from Blue Jacket Dairy in Bellefontaine, Ohio, Chardonnay from Debonne Vineyards in Madison, Ohio, chopped garlic, and fresh sage. Best served at room temperature and thinly sliced. The white mold on the outside is edible, but you can peel it off.
Fino Salami is an ode to the owner's mom and her love of garlic. This Finocchiona-style salami is a delicate balance of ground fennel and minced garlic. Best served at room temperature. The white mold on the outside is edible and can be peeled off.
Zin Salami is where wine country meets North Country as this salami is a blend of old-vine California Zinfandel with premium Ohio pork and seasonings. It has a robust flavor with notes of blackberry and hints of garlic and black pepper. Made in collaboration with Zanon Wines, Columbus, Ohio.
