This French vinegar is made from Banyuls wine which is a famous port-like wine with a Freanch AOC dating back centuries in the Southeastern Part of France on the Spain border. The wine of Banyuls is made of 3 grapes: Grenache noir, Grenace gris and Carignane. After pressing and vinification, the wine transfer from its ritualistic barrel sequence for for five years under varying conditions. During the fifth year, the wine gets a jump-start from an older ancestor - a 20% solution of Vieux Vinaigre de Banyuls where it spends another 6 months to 2 years in another barrel in a cool cellar before it is filtered and bottled as Le Vinaigre de Banyuls. The result? One of the best vinegars in the world. It is one of our personal favorites here at DLM. Combine it with Edmond Fallot Mustard and Vera Jane's EVOO and you have the best salad dressing ever.
