Imported from France, Istara P’tit Basque Ewe's Milk Cheese resembles Manchego but has a milder flavor. It is made with pure ewe’s milk from small herds of sheep that graze peacefully in the French Pyrenees Mountains. It is still cut by hand with a cheese maker's loving touch. This gentle technique protects the subtle, tender flavors. Once formed into a basketweave mold, it is aged for 70 days and encased with wax for preservation. It is sweet with a nutty finish and uniquely creamy for a semi-hard cheese. Enjoy this 1.3 lb wheel with crackers, bread, or just on its own.

Flavor Profile: Mild, Nutty & Uniquely Creamy
If you’re searching for a semi-hard cheese that balances structure with creaminess, P’tit Basque delivers:
It resembles Manchego in texture and origin (both are sheep’s milk cheeses), but P’tit Basque is softer, sweeter, and less sharp, making it incredibly versatile and crowd-pleasing.
This 1.3 lb wheel is perfectly sized for:
Entertaining – A show-stopping centerpiece for cheese boards especially when styling with a cheese curler.
Corporate gifting – An elevated gourmet option
Wine nights – Pairs beautifully with light reds and crisp whites
Everyday indulgence – Because great cheese doesn’t need an occasion
Or enjoy it simply on its own—thin slices allowed to come to room temperature reveal its full aromatic character.
Try it in a savory bruschetta, paired with tomatoes, olives, and rustic bread, or in a gourmet ham sandwich. P'tit Basque Fromage de Brebis was brought to the American market as a more approachable or accessible sheep's milk cheese. In other words, no so funky and sheepy.
