Imported from France, Istara P’tit Basque Ewe's Milk Cheese resembles Manchego but has a milder flavor. It is made with pure ewe’s milk from small herds of sheep that graze peacefully in the French Pyrenees Mountains. It is still cut by hand with a cheese maker's loving touch. This gentle technique protects the subtle, tender flavors. Once formed into a basketweave mold, it is aged for 70 days and encased with wax for preservation. It is sweet with a nutty finish and uniquely creamy for a semi-hard cheese. Enjoy this 1.3 lb wheel with crackers, bread, or just on its own.
