Origins of a Great Partnership

Algae Cooking Club was founded in April 2023 by Kas Saidi, who envisioned a future-forward cooking oil that was not only sustainable but also met the high standards of professional chefs. The oil is produced through a fermentation process using microalgae and sugar, resulting in a neutral, high smoke-point oil rich in Omega-9 fatty acids and with a buttery, hazelnut-like finish.

Daniel Humm’s Role

Daniel Humm became involved after being impressed by the oil’s culinary quality. Known for his commitment to sustainability—especially after transforming Eleven Madison Park into a mostly vegan restaurant in 2021—Humm aligned naturally with the brand’s mission. He officially joined as Club Culinary Officer, lending both his expertise and credibility to the product.  

Humm has since integrated algae oil into his kitchens, replacing traditional seed oils at Eleven Madison Park and Clemente Bar. This move underscores his commitment to reducing the environmental impact of fine dining while maintaining exceptional flavor and performance in cooking.
