INGREDIENTS

  • 1 lb pickling cucumbers, thinly sliced
  • 1 lb small purple kohlrabi, peeled, halved lengthwise, thinly sliced crosswise
  • 2 tsp kosher salt
  • 2 garlic cloves, finely grated
  • 3 Tbsp coarsely chopped cilantro
  • 2 Tbsp unseasoned rice vinegar
  • 1 Tbsp chili oil or pinch or two of red pepper flakes
  • 2 tsp finely grated lime zest
  • 1 Tbsp fresh lime juice
  • 1 tsp black sesame seeds
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1 tsp toasted sesame oil

INSTRUCTIONS

Toss sliced cucumbers, kohlrabi, and salt in a large bowl to coat; chill, tossing occasionally, 30 minutes.

Drain, then toss in a clean large bowl with garlic, cilantro, vinegar, chili oil, lime zest, lime juice, sesame seeds, fish sauce, sugar, and sesame oil to combine.

Keep refrigerated and enjoy up to 3 days.
