Hatch Chile Chicken Salad

INGREDIENTS

  • 1 cup Hellmann's Mayonnaise
  • 4 Roasted Hatch Green Chiles, chopped
  • 1 Lime
  • 1 Clove garlic
  • 1 Rotisserie Chicken, shredded
  • 1 Bunch green onion, chopped
  • Sea salt and pepper

INSTRUCTIONS

Puree the mayonnaise, roasted Hatch Chiles, lime juice, and garlic in a food processor until smooth.

Pull the chicken meat off the bones, shredding it with your fingers. Discard bones and skin.

Put the chicken meat in a large bowl with the green onions.

Spoon the Hatch Chile mayonnaise into the bowl and stir to combine.

Add sea salt and pepper to taste.
