Granny Smith Apples, peeled, cored, and cut into 8 wedges
Juice of 1 lemon

INSTRUCTIONS

Preheat oven to 450°F.

Season the pork tenderloins with salt and pepper. Spread mustard on all sides of the tenderloins and place in a shallow, oiled roasting pan.

Toss the apples in the lemon juice and tuck them into the roasting pan around the pork. Roast for 10 minutes and then turn the pork and apples over. Continue to roast for another 12 to 14 minutes, or until pork reaches 145°F.

Place the roasting pan on the top of the stove. Over low heat, add the chicken stock and additional tablespoon of mustard to taste. As the apples start to meld into the sauce, add cream and season with salt and pepper. Slice the pork and serve with the sauce.
