INSTRUCTIONS

Combine cherries, onion, and jalapeno in bowl. Toss them together to mix well.

Season the salsa, while tasting, with lime juice and sugar. If your cherries are tart, use less lime juice and a touch more sugar. If your cherries are sweet, use the full amount of lime juice and only a touch of sugar. The sugar will help the cherries to give up more juice.

Stir in minced cilantro, as desired, and season with salt and pepper. Refrigerate for an hour or until chilled and serve with corn chips, toasted baguette, or with cheese on a charcuterie board. Also great with chicken or pork tacos.
