Zucchini Ribbons

  • 4 medium-sized zucchini and/or yellow squash
  • 1 Tbsp DLM Extra-Virgin Olive Oil
  • 2 cloves garlic, minced
  • 1 pinch red pepper flakes, or more to taste
  • ¼ tsp salt and pepper, to taste


Wash and trim the zucchini. Using a vegetable peeler, shave the zucchini on all sides, until you reach the seeds. Discard the seeded center of the zucchini.
Heat the olive oil in a large sauté pan over medium heat. Add the garlic and chili flakes and cook for about a minute. Add the zucchini and toss lightly with tongs to coat with the oil. Sauté until warm and just barely tender, about 3-5 minutes.
Season to taste with salt and pepper. Delicious as is or top with diced local tomatoes and basil or DLM Marinara for a different variation. Serve with DLM Italian Bread if you wish.
