In a sauté pan, heat the olive oil over medium-high heat and sauté the onion and mushrooms until softened. Season to taste with the poultry seasoning, salt, and pepper.

In a large bowl, mix the sautéed onion and mushrooms with the turkey, veggies, and gravy.

Place everything in a buttered deep pie dish or casserole. Top with mashed potatoes, swirl with a fork, and drizzle with the butter.

Bake in the preheated oven until the topping is lightly browned and bubbly, about 30 minutes.
