Tequila Lime Butter

Excellent with grilled fish or sautéing with shrimp or scallops. Or, spread on toast and top with sliced avocado.

INGREDIENTS

  • 1 lb unsalted butter, softened to room temperature
  • Zest of 1 fresh lime
  • 1 Tbsp lime juice
  • 1 Tbsp tequila (or sub additional lime juice)
  • 2 Tbsp cilantro, chopped
  • Pinch or two of red chili flakes
  • ½ tsp salt
  • tsp white pepper

INSTRUCTIONS

In a bowl, blend ingredients together until completely incorporated.

To wrap and roll, place a large piece of plastic wrap on countertop. Spoon about ¼ of the mixture into center. Fold ½ of the wrap over butter and shape into an even log, about 2 inches in diameter. Twist ends and finish rolling into a compact log. Finish the rest of the butter making 4 small compact logs. Chill. Freezes beautifully.
