Simple Lobster Stock

INGREDIENTS

  • cup DLM Pure Olive Oil
  • 3 full shells from 3 cooked lobsters, rinsed and chopped
  • 8 cups water
  • 1 onion, roughly chopped
  • 1 clove garlic, crushed
  • 2 bay leaves
  • ¼ tsp red chili flakes
  • ¼ tsp thyme
  • 10 peppercorns

INSTRUCTIONS

In a large stock pot, heat the oil over medium-high heat. Sauté the lobster shells for 2-3 minutes.

Add at least 8 cups of water and the rest of the ingredients. Bring to a boil, then reduce heat to low and simmer for 2-3 hours.

Strain stock well and cool or freeze for later use.
