Simple Butternut Squash Soup

INGREDIENTS

  • 2 Tbsp DLM Extra-Virgin Olive Oil
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 1 butternut squash, peeled and diced
  • 32 oz vegetable or chicken broth
  • Salt and pepper to taste

INSTRUCTIONS

In a Dutch oven or soup pot, heat olive oil over medium heat. Add garlic and onion and cook until softened, about 5 minutes.

Add butternut squash and broth. Bring to a boil then cover and simmer for 15 to 20 minutes until squash is softened.

Either blend in pot carefully with an immersion blender or carefully blend in batches in a blender until smooth.
