These Pickled Cherries add the perfect amount of sweet-tart flavor and are excellent paired with cured meats, served on charcuterie trays, enjoyed with bold blue cheeses, or accompanying grilled meats.

INGREDIENTS

  • 1 cup Aunt Vera's Italian Red Wine Vinegar
  • ¼ cup sugar
  • 4 sprigs fresh thyme
  • 1 tsp salt
  • 1 lb ripe cherries, pitted

INSTRUCTIONS

In a medium pot, combine everything except the cherries.

Bring to a simmer over medium heat and stir until sugar is dissolved; add the cherries. Let cook for 1 minute and stir. Remove from heat and let cherries sit in liquid until cool.

Once cool, the cherries will keep in fridge for up to 1 month stored in an airtight container.
