INGREDIENTS

  • 2 Tbsp DLM Extra-Virgin Olive Oil
  • 1 medium onion, chopped
  • 1 garlic clove, thinly sliced
  • ¼ lb dry Spanish chorizo, finely chopped
  • 1 large ripe tomato, finely diced
  • 2 lbs mussels, rinsed
  • Chopped parsley for garnish

INSTRUCTIONS

Put the olive oil in a large pot that can be covered and turn the heat to medium. Cook the onion, garlic, and chorizo, stirring occasionally until the onion softens, about 5 minutes.

Add wine, tomatoes, and mussels in the pot; cover and cook, shaking the pot occasionally, until mussels open, about 5-10 minutes.

Taste and adjust seasoning if necessary. Sprinkle with parsley, and serve.
