Local Garlic Potato Salad

INGREDIENTS

  • 1 qt potatoes
  • 1 cup mayonnaise
  • 4 garlic cloves, minced
  • 4 Tbsp fresh parsley, minced
  • Salt and white pepper to taste

INSTRUCTIONS

Peel and cut potatoes into 2-inch pieces. Place potatoes in a large pot and add enough water to cover by 1 inch. Boil until they are tender but not mushy, about 10 to 20 minutes. Drain the potatoes and set aside until cool enough to handle.

Mix the remaining ingredients in a large bowl. Add the potatoes, toss gently, and let stand 1 hour before serving.
