Grilled Eggplant & Tomato Salad

Excellent on its own or try it topped with crumbled goat cheese or feta. Can be mixed with your favorite salad mix or piled on top of DLM Hummus or warm toast.

INGREDIENTS

  • 2 eggplants, trimmed and sliced 1/2-inch thick
  • DLM Extra-Virgin Olive Oil for grilling
  • cups ripe tomatoes, diced
  • 3 Tbsp mint, chopped
  • cup Garlic Expressions Salad Dressing
  • Salt and pepper to taste

INSTRUCTIONS

Preheat grill or grill pan. Brush eggplant slices with a little olive oil. Grill about 4 minutes on each side, or until they are soft and golden brown. Remove the cooked eggplant and let cool before chopping into 2-inch pieces.

In a bowl, combine the eggplant, tomatoes, and mint. Lightly dress with the Garlic Expressions Dressing and season to taste with salt and pepper.
