Fresh Tomato & Basil Bruschetta

  • 3 large tomatoes, diced
  • 3 Tbsp red onion, minced
  • 1 garlic clove, minced
  • ¼ cup fresh basil, chopped
  • 4 Tbsp Vera Jane's Extra-Virgin Olive Oil
  • 1 tsp red wine vinegar
  • Salt and pepper to taste
  • 1 loaf DLM Italian Bread or French Baguette


Preheat grill or broiler to high.
Combine the tomatoes, red onion, garlic, and basil in a bowl. Add ½ the oil and vinegar. Season to taste with salt and pepper. Set aside.
Cut the bread into thick slices. Brush lightly with a little of the olive oil and season lightly with a little salt. Broil or grill until golden.
When ready to serve, mound the tomato mixture on top of the prepared bread slices.
