INGREDIENTS

  • 1 Tbsp olive oil
  • 1 medium onion, chopped
  • 2 small red bell peppers, sliced
  • 16 oz Landes Smoked Sausage Kielbasa, cut into 1/2-inch coins
  • 1 each small zucchini & yellow squash, cut into 1/2-inch half-moons
  • 1 garlic clove, minced
  • ¼ cup chicken broth
  • 15 -oz can black beans, rinsed & drained
  • 2 cups cooked brown rice
  • ½ cup frozen corn
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp chopped cilantro

INSTRUCTIONS

Heat oil in a 12-inch cast iron skillet over medium-high heat. Add onion and cook, stirring occasionally, for 2 minutes. Stir in bell pepper and sausage; continue to cook until lightly browned, about 2 to 3 minutes. Add zucchini, yellow squash, garlic, and broth; cook until tender, about 3 minutes.

Stir in beans, rice, and corn; cook, stirring occasionally, until just warmed through, about 2 to 3 minutes. Season with salt and pepper.

Top with cilantro and serve.
