Charred Radicchio and Cherry Salad

INGREDIENTS

  • 1 head of radicchio, cut into 1-inch-thick slices
  • 1 Tbsp DLM Aged Balsamic Vinegar of Modena
  • Salt and pepper to taste
  • 4 Tbsp Vera Jane's Extra-Virgin Olive Oil, divided
  • Squeeze of fresh lemon juice
  • 1 cup ripe cherries, pitted
  • Handful or two of arugula
  • Shaved Parmigiano-Reggiano for serving

INSTRUCTIONS

In a bowl, toss the radicchio with balsamic vinegar; season with salt and pepper.

In a large sauté pan, heat 2 tablespoons olive oil over medium-high heat.

Add the dressed radicchio and sear on one side until it starts to char then briefly turn over.

Remove from heat and let cool to room temperature.

When cool, add another 1 to 2 tablespoons olive oil, squeeze of fresh lemon juice, and season again to taste.

Toss in cherries and arugula.

Garnish generously with shaved Parmigiano-Reggiano before serving.
