INSTRUCTIONS

In a bowl, toss the radicchio with balsamic vinegar; season with salt and pepper.

In a large sauté pan, heat 2 tablespoons olive oil over medium-high heat.

Add the dressed radicchio and sear on one side until it starts to char then briefly turn over.

Remove from heat and let cool to room temperature.

When cool, add another 1 to 2 tablespoons olive oil, squeeze of fresh lemon juice, and season again to taste.

Toss in cherries and arugula.

Garnish generously with shaved Parmigiano-Reggiano before serving.
