Bacon Mustard Butter

Delicious smeared on top of a grilled DLM Bratwurst, pork tenderloin, Kurobuta Pork Chop, or slathered on local corn. 

INGREDIENTS

  • ½ cup bacon, finely chopped
  • ½ cup onion, finely chopped
  • 1 cup unsalted butter, softened to room temperature
  • 1 Tbsp whole grain or brown deli mustard
  • ½ tsp salt
  • tsp white pepper

INSTRUCTIONS

In a sauté pan, cook bacon. Remove from pan and drain off all but 1 tablespoon of bacon fat. Return pan to heat and sauté the onions until soft. Remove from heat and let cool completely.

In a bowl, blend all of the ingredients together until completely incorporated.

To wrap and roll, place a large piece of plastic wrap on countertop. Spoon about ¼ of the mixture into center. Fold ½ of the wrap over butter and shape into an even log, about 2 inches in diameter. Twist ends and finish rolling into a compact log. Finish the rest of the butter making 4 small, compact logs. Chill. Freezes beautifully.
