A Small Good is a small, family-run salumeria operating out of Midcoast Maine (Rockport) that is fundamentally changing how dry-cured meats and bacon are made. Founded by Oliver and Kelly Perkins, they bridge traditional European charcuterie techniques with cutting-edge culinary microbiology.
Instead of relying on synthetic nitrites or heavy salt cures to preserve meat, A Small Good crafts cleanly sourced, humanely raised, antibiotic-free pork using koji culture and wild fermentation. The result is charcuterie with an exceptionally pure pork flavor, velvety texture, and a clean, lingering umami finish.
