John is a culinary enthusiast and engineer and the product of four Italian grandparents. He turns breakfast and dinner for his wife and teenage children into a culinary adventure. John has been involved with the Culinary Center as a student,as a volunteer, and now as a Culinary Instructor. He loves foods that are rich with history an flavor.

Join us for a delicious small-plates menu all prepared in a portable outdoor oven. John Chico will show us how to use such an oven as he cooks up a variety of proteins and vegetables to demonstrate its versatility. You'll enjoy Marinated Artichoke Hearts, steamed ahead and finished in the outdoor oven and served with savory Remoulade Sauce, Gambas al Ajillo (Spanish-Style Garlic Shrimp), Pork Souvlaki Skewers with tangy Tzatziki, Meatball Sliders with Cheese and Onions, and fresh Pineapple in Rum Caramel. Outdoor pizza ovens are great for a variety of foods, and you'll discover how simple the cooking process is with very tasty results. These recipes are great for lighter, healthier warm-weather meals. Our portable pizza oven uses propane and couldn’t be easier to move from deck to patio to picnic table. John will share his tips for cooking seafood dishes pizza oven-style, but these recipes are just as simple to prepare inside. You'll enjoy Oysters Rockefeller, Shrimp With Garlic and Sherry, Herb-Crusted Cod With Spring Mix Salad, and Fresh Peach Shortcake With Whipped Cream. This menu will be paired with wine.
