John has been involved with the Culinary Center as a student,as a volunteer, and now as a Culinary Instructor. He loves foods that are rich with history an flavor.

Join John Chico for a creative menu using one chicken for every course. You'll learn basic butchery skills for how to break down a whole chicken and why doing it yourself is not at all intimidating. John will demonstrate how to cut the chicken into eight to ten pieces, and ideas for using it for a variety of delicious ways. These recipes are keepers! Chicken Breasts in Tarragon-Mustard Cream Sauce, Chicken Thigh Tacos, and Chicken and Dumplings With Homemade Stock. This menu will be paired with wine.

Hands-On Couples' Class
Once you learn to make this beautiful braided yeast bread it may be the only bread recipe you’ll need. Warm from the oven with its golden crust, challah is an indulgence; however, its fluffy texture and subtle sweetness makes it the perfect bread for incredible dishes like French toast, grilled sandwiches, and bread casseroles. Join John Chico for instruction and pointers for making this show-stopping bread from scratch. You’ll learn to mix the dough, how to proof, braid, and bake it. Each couple will take their loaf home to enjoy. We’ll have bread made ahead to enjoy with a delicious brunchy meal, including sparking wine.

Do you need ideas for an apéritif for your cocktail party or a light dessert? These tender little cakes are super easy to throw together and take approximately ten minutes to bake. You can make the batter the day before and bake them shortly before guests arrive or serve at room temperature. John Chico will give you ideas for savory and sweet Madeleine batters and demonstrate how to bake them in special molds, giving them their classic, delicate shell-like shape that makes them look lovely on platters and boards. This menu will include charcuterie and wine.
