Turkey Salad With Jicama & Poppy Seeds

INGREDIENTS

  • 1 lb cooked turkey, diced
  • 1 cup jicama, diced
  • ½ cup celery, diced
  • ¼ cup currants or raisins
  • 2 Tbsp red onion, diced
  • 2 Tbsp parsley, chopped
  • ½ tsp salt and pepper, to taste
  • ½ cup your favorite poppy seed dressing, adjust to taste

INSTRUCTIONS

In a large bowl mix the turkey, jicama, celery, currants, red onion, parsley, salt, and pepper. Add enough dressing to taste, making sure everything is evenly coated, and chill until ready to serve.
