Shaved Squash Salad

INGREDIENTS

  • 1 lb summer squash (zucchini, yellow squash, or a mix of both)
  • 3 Tbsp DLM Pure Olive Oil
  • 2 Tbsp fresh lemon juice
  • 2 tsp green garlic, minced
  • Salt and black pepper to taste
  • Local salad greens, optional for serving

INSTRUCTIONS

Trim the ends off summer squash. Using a vegetable peeler, thinly slice the squash lengthwise into strips and transfer to a large bowl.

In a small bowl, whisk together olive oil, lemon juice, minced green garlic, and salt & pepper to taste. Pour dressing over squash. Season again to taste with salt and pepper and let stand for a few minutes. Delicious on its own or try serving on top of a bed of local greens.
