Corn, Tomato, & Micro Green Salad

INGREDIENTS

  • 4 ears fresh corn
  • 1 pt fresh tomatoes, diced into 1/2-inch cubes
  • 3 green onions, finely chopped
  • 2 Tbsp DLM Extra-Virgin Olive Oil
  • 2 tsp red wine vinegar
  • Salt and pepper to taste
  • handful of micro greens

INSTRUCTIONS

Shuck fresh corn, cut kernels from the cob, and transfer to a large bowl.

Combine with tomatoes, green onions, oil, and vinegar, and toss to blend. Season to taste with salt and pepper.

Just before serving, toss or garnish with micro greens.
