Yukon Potato Salad with Bacon
Tender Yukon Gold potatoes mixed with Dijon mustard, onion, and DLM Uncured Bacon. The perfect side dish.
3 lbs Yukon Gold potatoes, cut into 3/4-inch cubes
4 Tbsp Vera Jane’s Extra-Virgin Olive Oil
2 Tbsp Aunt Mary’s Italian White Wine Vinegar
2 Tbsp Dijon mustard
4 green onions, thinly sliced
6 large stalks celery, halved lengthwise and thinly sliced
1/2 cup cooked DLM Uncured Bacon bits
Salt and freshly ground black pepper to taste
Steam potatoes for about 15 minutes or until fork tender. In a large bowl, combine olive oil, vinegar, mustard, green onions, celery, and bacon bits. Combine mixture with hot cooked potatoes and add salt and pepper to taste. This salad may be served hot or cold.
