Texas Caviar

Black eyed peas are a southern staple for welcoming the new year! This recipe is perfect for a crowd.


4 cans black eyes peas, drained

1 cup celery, chopped

1 cup red onion, chopped

1 cup red pepper, chopped

1/2 cup jalapeño, chopped

1/2 cup parsley, chopped

1 cup Vera Jane’s Extra-Virgin Olive Oil

1/2 cup apple cider vinegar

1/2 tsp garlic

1/4 cup Dijon mustard

1 tsp celery seeds

1/2 tsp oregano

2 Tbsp sugar

Salt and pepper


Place the celery, red onion, red pepper, jalapeño, chopped parsley, and drained black eyed peas in a bowl. In a small bowl, whisk the oil, vinegar, garlic, mustard, celery seed, oregano, sugar, salt, and pepper. Pour this mixture into the bowl with the beans and veggies, and stir until evenly coated.

Chill until ready to serve.

Tip: it tastes even better the next day!
