Preheat oven to 425°F. Peel potatoes and cut into wedges lengthwise. Drizzle with a little olive oil and roast about 18-20 minutes or until cooked and browned on edges; season with salt and pepper. Meanwhile, cook burger until nicely browned on both sides and juices run clear, or you reach 160°F. Slather with blue cheese dressing and place on split hamburger bun.
