Kale and Blueberry Salad
1 bunch local kale, washed, stems removed, and chopped
2 Tbsp Vera Jane’s Extra-Virgin Olive Oil
1 whole lemon, zest + juice
1 whole orange, zest + juice
1 tsp DLM 100% Pure Honey
Salt and pepper to taste
1 cup fresh blueberries
2 Tbsp toasted nuts (walnuts, almonds, or pepitas)
Place kale in a large bowl and drizzle 1 Tbsp olive oil into leaves, massaging with hands. Do this for a few minutes, massaging the olive oil well into the leaves. Set aside.
Whisk together the juice and zest from the lemon and orange with the remaining 1 Tbsp olive oil and honey or agave. Season to taste with salt and pepper and pour dressing over the kale leaves.
Just before serving, toss with the blueberries and nuts.
