Hatch Chile Elotes

1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup Cotija cheese, crumbled
1/4 cup Hatch chiles, roasted and finely minced
1 garlic clove, minced
1/2 tsp ancho chile powder
Salt and pepper to taste
6 ears freshly shucked corn
1/4 cup cilantro, chopped
1-2 Tbsp fresh lime juice to taste

In a bowl mix the mayonnaise, sour cream, cheese, Hatch chiles, garlic, chile powder, seasoning to taste with the salt and pepper. Set aside until ready to use.

Preheat grill to medium high. Roast corn over grill until charred on all sides. When cool enough to handle, cut corn off the cob and mix with the dressing, tossing in cilantro and lime juice to taste.
