Hatch Chile Country Gravy

2 Tbsp butter
½ cup onion, chopped
2 Tbsp flour
2 cups milk
1 cup roasted Hatch Chiles, diced
Salt and Pepper taste

In a small sauce pan, heat butter over medium heat and sauté onions until soft. Sprinkle in flour and stir until a roux forms. Slowly add milk, whisking to combine. Bring to a low boil, lower the heat, and let simmer for a couple of minutes. Add the diced Hatch Chiles and season to taste with salt and pepper. Excellent served over biscuits. Variations: add crumbled DLM Breakfast Sausage, chorizo, or shredded cheese.

SERVINGS: Makes 2 cups
