Decadent Chocolate Cheesecake
1 pkg chocolate wafer cookies
9 Tbsp unsalted butter, melted and divided
12 oz semisweet chocolate chips
2 (8 oz) packages cream cheese, softened
2/3 cup sugar
3 large eggs
1 cup whipping cream
1 tsp vanilla extract

Crush cookies; stir in 7 tablespoons of melted butter until crumbs are well-moistened. Press firmly onto bottom and up sides of 10” cheesecake pan.
Preheat oven to 350°F. In mixing bowl, beat together cream cheese and sugar. Add eggs and mix. Melt chocolate chips and 2 remaining tablespoons butter in microwave. (Put in microwave for about 1 minute and then stir. Do not over melt.) Combine cream cheese and chocolate mixtures. Add whipping cream and vanilla and beat until incorporated and smooth. Pour mixture into crust-lined pan.
Bake 15 minutes at 350°F. Reduce heat to 325°F and bake another 30-40 minutes or until sides of cheesecake are firm to the touch. Middle will still be “wiggly”. Cool to room temperature on a wire rack. Chill in pan in refrigerator overnight. Serve with whipped cream and chocolate leaves.
