Chocolate Truffle Mice
4 oz semisweet chocolate, melted
1/3 cup sour cream
1 1/3 cup chocolate wafer crumb, divided
Gold or silver dragees for eyes
Sliced almonds for ear
Black licorice straps for tails
In a small bowl, combine melted chocolate and sour cream. Stir in one cup chocolate wafer crumbs. Mix well. Cover and refrigerate until firm, about 1 hour.
Put remaining crumbs in a shallow bowl. Roll scant tablespoons of chocolate mixture in small balls slightly pointed at one end. Roll pointed balls gently in remaining chocolate wafer crumbs. Insert dragees for eyes, almond slices for ears and small bits of licorice for tails. Refrigerate until firm, about 2 hours. Truffles may be stored in airtight container in refrigerator up to one week.
Option: “Mice” can be rolled in toasted coconut instead of chocolate wafer crumbs if you desire a “furry” coat.
