Celery Root Salad

A perfect fall or winter salad with the delicate flavors of celery. Rich, crunchy walnuts tossed with celery root and celery stalks in a Creamy Sherry Vinaigrette.

1 shallot, minced

3 Tbsp honey or agave

3 Tbsp sherry vinegar

2 Tbsp balsamic vinegar

3 Tbsp olive oil

1/4 cup canola oil

1/2 cup crème fraîche or sour cream

Generous seasoning to taste of salt and pepper



1 large celery root, peeled and cut into matchsticks

1/2 cup celery, chopped

1/2 cup walnuts, toasted and chopped

1/2 cup currants

1/2 cup parsley, chopped

About 1/2 cup or more of Creamy Sherry Vinaigrette


Creamy Sherry Vinaigrette:

In a small bowl, whisk together the shallot, honey or agave, sherry vinegar, balsamic vinegar, and olive oil. Then slowly whisk in the canola oil. Add the crème fraîche or sour cream and season with salt and pepper to taste.



In a large bowl, toss the salad ingredients with some of the creamy sherry dressing. Adjust seasoning if necessary.
