Cassoulet Beans in Savory Tomato Sauce

The hearty Rancho Gordo Cassoulet Beans pair perfectly with the bright tomato sauce in this recipe that's adapted from Rancho Gordo.


2 Tbsp DLM Extra-Virgin Olive Oil

½ yellow onion, chopped

2 cloves garlic

4 tomatoes from a can of whole tomatoes, chopped roughly

½ cup tomato juice, reserved from the can

1 tsp each cinnamon and oregano

2 Tbsp capers

Salt to taste

2 cups cooked Rancho Gordo Cassoulet Beans

Flat-leaf parsley, chopped

1 lemon for juice


In a sauce pan, heat the olive oil over medium heat, add the onions and garlic and cook until soft. Add the tomatoes, juice, cinnamon , and oregano and let simmer for 15 minutes. Add the capers and season to taste with some salt and pepper. Add the cooked beans and simmer until heated through. Garnish with some chopped parsley and a splash of lemon juice.
