Asian Salad with Peanut Butter Dressing

Give your lunch a makeover with this trendy, not to mention delicious, salad in a jar recipe!


1 Tbsp peanut butter
1 Tbsp soy sauce
1 Tbsp honey or maple syrup (vegan)
1 Tbsp vinegar or lemon
2-3 Tbsp water
A pinch or two of chopped or grated ginger (dried is fine)

Salad (layered from bottom to top in a 32-oz Mason jar):
Chopped cucumber, chopped asparagus (blanched for
2 minutes, if desired), chopped red pepper, chopped
scallions, chopped purple cabbage
Edamame, chopped snow peas, chopped broccoli,
sliced mushrooms
Romaine, nuts (peanuts, cashews)


For the Dressing:

Whisk all ingredients together. Shake before using. Store in refrigerator.

To Build the Salad:

Starting with the dressing, layer the salad ingredients (see above) in a 32-oz Mason jar.
